## Title

    Proposed fix: [Docling] offline/air-gapped: "The value of self.artifacts_path=... is not valid. When defined, it must point to a folder containing all models required by the pipeline."

## Body

    Recommended action: Prefetch with `docling-tools models download` (plus `easyocr --easyocr-lang ...` or download-hf-repo for extra models), ship the folder, and set artifacts_path / --artifacts-path / DOCLING_ARTIFACTS_PATH to it.
    
    Option: Prefetch models and point artifacts_path at them [evidence: official_recommended_action]

    2. copy ~/.cache/docling/models into the image
